Fried dumplings are not hard to make . You start with the right amount of oil, wait for the oil to get really hot to drop the dumplings in. Flip through the buns until they are golden brown. With familiar ingredients like pork, sausages, along with a few boiled quail eggs, yourdumplings can be phenomenal. The outside is a sweet dough crust, crispy and golden brown. When eating, you dip the buns in a bowl of fresh and sweet and sour dipping sauce, with
sides of pickled papayas, crunchy and green vegetables salad.
Ingredients – for about 20 small buns :
*The coating flour :
– 170g flour
– 150ml milk
– 2g yeast
– 5g sugar
*The buns :
– The powder which had incubated overnight
– 170g flour
– 90g sugar
– 10g baking powder
– 20ml vegetable oil
– 3g salt
*The stuffings :
– 200g minced meat
– 1/2 onion
– 6-7 stalks green onions
– 1 year free
– 1 small mushrooms
– 2-3 the wood ears
– 50g sugar
– Juice of 2 lemons
– Fish sauce
– 200ml warm water
Mix all the ingredients of the powder component. Seal and incubate overnight or at least 8
hours at room temperature.
Put sugar, cooking oil, salt, flour and baking powder in a bowl and mix well with the powder that’s been incubated overnight.
Roll flour into dough until smooth, form into 1 block and not sticky to the touch.
Let the dough rest for 15 minutes.
Cut the pork, chop up the mushroom and onions. Mix well and marinate with seasonings.
Divide the meat into small meat balls
Cover the dough around the meat balls, make sure the meat balls are sealed.
Preheat oil in deep fryer or skillet, drop the dumplings in batches. Flips the dumplings until they are cooked and golden brown. Put them on a paper towel to drain the oil.
Mix sugar, water and lemon juice together. It should taste like lemonade, but lighter; not
too sweet or sour. Add fish sauce.
Serve the fried dumplings with sweet and sour sauce and pickled cucumber and green salad.
